Buckwheat Pancakes

Everyone loves a treat, but it is so much better we can make sure
that these treats are delicious but still healthy! Buckwheat is a great source
of carbohydrates and protein and also contains several other vitamins and
minerals such as magnesium, manganese and B vitamins. Buckwheat is
also gluten free!

Ingredients

1 cup buckwheat flour
1/2 cup almond flour
2 tsp cinnamon
1 tsp Baking Powder
1/2 tsp salt
1 cup Buttermilk
1 tsp vanilla essence
1 tbsp honey
1 egg
1 mashed banana

Method

  1. Mix together the buckwheat flour, almond flour, cinnamon, salt and
    baking powder.
  2. Add all the wet ingredients (buttermilk, egg, vanilla essence, honey and
    banana) to the dry ingredients and mix well
  3. Heat a medium sized pan on medium heat and place a spoonful of
    mixture into pan
  4. Flip pancake once you see bubbles appearing
  5. Top off with anything delicious- honey, peanut butter, banana or
    strawberries
